A few of my favorite things-- I also updated so check it out!

Ok really, I've had a few different requests for recipes and I thought I would just post them to share with everyone. Here are some my best. These are all tried and true. We eat them often at our house and love them!

Tacos in Pasta Shells

18 jumbo pasta shells
1 lb ground beef
8oz cream cheese(or Neufchatel cheese)
1 tsp chili powder
little bit of salt

Salsa
Grated Cheese
Tortilla chips -crushed

Boil shells and let cool while you mix beef, cream cheese, chili powder and salt. Fill shells with mixture place in 9x13 and cover in salsa. Bake at 350* for 15 min. take out and cover in tortilla chips and cheese and bake for an additional 15 min.

Cafe Rio Pork Barbacoa

5-6 lb. pork roast

21 oz. black cherry Shasta -don't use diet soda you can use any dark soda though.
1 cup brown sugar
3/4 cup white sugar
1 clove garlic, minced
6-ish oz. red taco sauce (I used hot)
1 tsp dry mustard
1 tsp cumin
1/4 tsp cayenne pepper

start my pork roast the night before in a crock pot with water. The next morning I drain the water and cut the pork into smaller pieces and add all these ingredients (previously mixed together) and keep it in the crock pot until the roast is falling apart, about dinner time that night. You can make it a salad or as tacos...possibilities are endless! I got this recipe here. I modified it though so it's not as spicy as her recipe.

Tortilla Soup

4 chicken breasts
2TB butter
2- 14oz cans ckn broth
2 14oz cans stewed tomatoes -I puree mine in the blender, we don't really like chunky food
1/2 c fresh cilantro
1 TB cumin
1 garlic clove -chopped
1c salsa

cook and shred ckn. put all ingredients into a crock pot and cook for 3-4 hrs. Serve with

Monterrey jack cheese-cubed
tortilla chips
sour cream

The Best Chocolate Cake EVER!!

1 box devil’s food cake mix
1 package Jello instant chocolate pudding mix
1 cup sour cream
1 cup vegetable oil
4 eggs, beaten
1/2 cup milk
1 tsp vanilla
2 cups mini semisweet chocolate chips
Preheat oven to 350 degrees F. In a bowl mix together everything except chocolate chips. Batter will be thick. Stir in the chocolate chips. Pour batter into cake pan of choice. Bake until tooth pick comes out clean. (for a general idea I would start with 30-45 minutes) Then I frost it with this:
Chocolate Butter Cream Frosting
6 TBS butter softened
2 2/3 cup powdered sugar
1/2 cup cocoa
1/3cup of milk or cream
1 1/2 tsp vanilla
Cream butter, add sugar and cocoa, add milk then vanilla. If it's too thick for your liking add a little bit more milk. I love it just the way it is.

Chile and Cheese stuffed Chicken

6 ckn breasts
8 oz cream cheese
1 can of chopped green chilies
1 cup shredded mozzarella cheese
Italian bread crumbs
Mix cheeses and chilies. Cut a pocket in each chicken breast and stuff with cheese mixture. coat in egg and then bread crumbs. Cook at 350* for 45 minutes

Spinach Salad

Spinach, Romane & Iceberg letuce
dried cranberries
Green onion
mandarin oranges
Candied almonds
mix together and serve.
Dressing: 1/4 c oil
2 TBS vinegar
2 TBS Sugar
1/4 tsp salt
1 TBS parsley

Chili

1 qt vegetable juice (V8)
1 qt salsa
1 can chili beans
1 lb ground beef
1sm can of green chilies
1 onion
4 cloves of garlic
1 c brown sugar
1 1/2 pkgs chili seasoning
1/4 tsp cumin
1/4 tsp black pepper
I brown meat with chili seasoning garlic and onion. Mix in all other ingredients and serve hot with corn muffins or fresh bread.

Avocado Salsa

Marinade 1 bag of frozen corn in: 1/3 c oil
3 TBS vinegar
1/4 cup Lemon Juice
1/2 tsp salt and pepper
1 tsp oregano
1/4-1/2 tsp garlic powder and minced onion (to taste)
just before serving add
1 can olives sliced
1 red pepper diced
1 green pepper diced
2-3 avocados diced (I like a lot of avocado)

Tomato Fondue

1 T Olive Oil
1 med Onion, chopped
2 tsp Garlic, minced
1 28oz can Diced Tomatoes with Oregano, Basil and Garlic
1 c. Apple Juice
2 8oz Cream Cheese, cut in 1” cube
1 c. Monterey Jack Cheese – shredded

Dip ideas:
French bread, Cubed Mozzarella, Pepperoni, Tortellini, Green Peppers, Bagel Chips

Heat the olive oil in a saucepan over medium-high heat. Add the onion and garlic and sauté until onion is very soft. Add the tomatoes, and apple juice. Simmer 10 min, until liquid is almost completely reduced. Add the cheese and heat, stirring constantly, until melted. Pour into a fondue pot, over medium heat.
